Asian Beef Tacos
A lemon grass inspired beef filling with an Asian ramen salad topper. Unique yet flavourful!

This was a fusion of several favorite things for me. I've done a rendition of the www.tablefortwoblog.com Asian salad, as an actual salad before and it was delicious! I'm not entirely sure where I got the inspiration for the beef, other than to say I love lemongrass and all thai seasoning and it sort of felt right in the mix of it!
Here we go.....for the beef... I still have some ground beef from the half cow we purchased, and I'm still coming up with creative ideas on how to get rid of it without feeling like I'm eating the same thing all the time. To start I added some high heat oil to a pan and added some lemon grass paste, chopped jalapenos, red onion, minced garlic and fresh minced ginger. I sauted these to become aromatic and flavourful and then put in the ground beef to cook. The purpose? To really incorporate the flavours right into the meat and it worked like a charm.
I also added some rice vinegar and soy sauce to the beef mix to really give this a punch of flavour, and when the meat was fully cooked but there was still liquid in the pan... I deployed my secret weapon to ensure all of those flavours remained intact...cassava flour... it has a mild flavour so it will never over power your dish but thicken's like crazy when you need it to!
In the mean time I worked towards a rendition of the salad, but as a taco topper! I simply finely chopped some cucumbers, and red peppers and romaine hearts.
I cheat, even though it's not amazing for you, I added a 1/4 of the seasoning pouch from the ramen on the top for a flavour boost. The dressing is the true winner though! Because this is just a taco topper the proportions are smaller... I literally put 1 Tbsp each of soy sauce, rice vinegar and sesame oil over the mix and tossed well.
On to building the taco.... Clearly my favourite part LOL!
I then added the ramen salad topper!... and no lie, these were incredible!!
But wait there is more..... There is still the ramen in this, but if you want to dial down the carbs... this makes an amazing salad as well!! Enjoy!
The Recipe:
1 pound of ground beef
2-3 Tbsp of lemon grass paste
2-3 Tbsp of minced garlic
1 Tbsp or a small knuckle of ginger minced
1 jalapeno diced finely
1/4 a red onion finely diced.
Add 2 Tbsp of rice vinegar and 3 Tbsp of soy sauce to the mix while cooking. Should you land with lots of juice in the pan.... sprinkle cassava flour to the pan 1 tsp at a time, waiting at least 2 minutes in between on low heat to allow the thickening to happen.
Salad topper
smash up 1 bag of ramen, use 1/4 of the seasoning pouch to season, more if you like.
cut up some romaine hearts about 1/2 a red pepper and 1 baby cucumber or 1/4 a regular cucumber in quarters (think small bite sized pieces)
layer on a flour or corn tortilla and serve hot!
