Asian Chicken Mango Salad

This is the perfect summery dish that boasts spice and sweetness! My favourite flavour combo this summer.

I do not want to be cooking lots of food inside my house right now... its hot out! But with my BBQ outside to cook up some delicious chicken breasts, pairing that with an elaborate salad with tons of flavours, is an awesome meal that is both filling and delicious.





Both the chicken marinade and the salad dressing itself stems from these ingredients. I mixed up 1/4 cup of rice vinegar with 1/4 cup of soy sauce, 3 Tbsp of sesame oil, 1 Tbsp of dehydrated crushed ginger and 2 Tsp of red chili pepper flakes. I also added some garlic and a touch of avocado oil and shook the mix up and set aside. I placed the chicken breasts in a shallow dish and coated with some of the marinade and set the rest aside for the dressing.



The base of this salad was romaine and shredded cabbage. I added some cubed up mango, some cut up snap peas and the secret ingredient to a crunchy delicious salad.... Ramen.






I BBQ'd up the chicken breasts, adding a bit more sauce as I went to fully sear the marinade to the chicken.




I sliced them up!




And presented them on top of the salad. lightly drizzled the salad with the dressing and finished it off with pea shoots both for flavour but a fun presentation!
