Bacon Wrapped Scallops

Sporting a locally made Tequila- Lime marinade... Definitely make these for the Mother in your life!!! Happy Mother's day!!

This is initially labour intensive... hand wrapping each scallop in bacon..... but the labour of love is well worth it to have a post kids bedtime, drink and appy together as a couple with my husband! Chef Ann Kirsebom has made a whole line of sauces and they are fantastic! The Tequila-Lime is my favourite, and I used it here.

Once wrapped, we marinated the scallops for about 1 hour before placing them on the BBQ to cook.... These could be done in the oven, but the BBQ was perfection.

Look at how beautiful these turned out! The perfect late night appetizer, or for any time, a evening appy with the extended Mother's you love! Socially distanced of course!
