BBQ ribs, Homemade Baked Beans and Okra, Slaw filled egg rolls.

So I think I got on a Southern fusion food vibe lately... Not sure how or why, but I've certainly eaten well because of it! What is also true and if you follow my posts you'll likely already caught on to the vibe... but the egg roll!!! I don't think I've conventionally stuffed one yet but man am I enjoying the fun of their versatility. Check this out with me....
I know some of my friends BBQ and smoke their ribs... all of those methods are awesome! I've done them, but sometimes I think just cooking them in the oven has lost "cooking street cred!" But why? They turn out so well! I seasoned these antibiotic free pork ribs with meat seasoning and a high heat oil. I cook them just with the seasoning for the first half before adding the sauce... check out the full process here>>>>>
Making your own baked beans is amazing! It allows you to use organic ingredients and have you ever read a can of baked beans from the store? Oh dear the amount words you can't pronounce! In this case I used organic pinto beans, but I have used a blend with some black beans or white beans... the options are endless and this is seriously easy! Trust me. Check out the process here>>>>>
Now for the egg rolls... I love this creation and it worked so well with the flavours of the ribs and beans.
I used pre-shredded coleslaw mix with green and red cabbage and carrots. I also cut up some okra and added all of the pan to sauté down.
I seasoned the mix with this seasoning blend from hard core carnivore but really you can use any seasoning that adds that smoky flavour... a good idea might be the same seasoning you used for your ribs! Stir well until the veggies are soft.
Now to start wrapping the the egg rolls. I used pre-made sheets, but added scoops of my topping to the corner.
This is my system for wrapping but feel free to just stick to the triangle.. you will just need some water to stick the edges. The little package method I find holds together better.
Because your filling is cooked, the frying process need only brown the wrappers on all sides... watch the oil temperature so your egg rolls do not burn.
