This would have probably been a dish I would never have tried, if not for my friends and an Oktoberfest celebration this year!! I had seen it on the menu in German restaurants but I always went schnitzel so I passed it by.... what a mistake! And what was I thinking? It has pickles inside.... I love pickles!! Making these were a breeze and was a fun and different week night meal... let me show you how quick this comes out!

I started with some pre-cut rouladen steak slices and laid them out on m chopping block.

I also defrosted a pack of our homemade bacon and thought I would bacon wrap these rouladen's as a fun departure from the norm! If you want to start making your own bacon, check out the process here>>>

I thinly sliced some dill pickles... I love the garlicky version and those pickles worked out nicely in this dish. Lay the pickles out width wise as you will be rolling these up length wise... hope this makes sense check out the photo. Some generous squirts of grainy mustard is next, add too your particular taste!

next was sliced white onion and roll these puppies up! No lie, I was at this for about 5 minutes at this point... easy peasy!

At this stage I simply wrapped the beef in the bacon, using tooth picks where necessary to hold it together. I also sprinkled some italian seasoning on the beef prior to for additional flavour.

Place these in a hot pan with a high heat oil to brown the bacon on all sides. I found that if you place the end sections of the bacon down first and give that part a really good sear, then the bacon retains that shape and holds together during the flipping. Pre-heat the oven to 350 degrees as the searing is only intended to brown the bacon and will not cook the beef and contents through.

If you would like to pair this meal with german cabbage, check out the recipe here >>>>

I hope you give these a try and realize they are amazing sooner than I did... I still regret all the times I passed these by!!
