Bourbon Organic Cranberry Sauce

Safe for kids, with a unique but amazing flavour that may almost make your cranberry sauce the hit of Thanksgiving Dinner!

One of my least favourite things is canned cranberry sauce. It lacks flavour and there is something unsettling that it retains the rivets of the can itself. Even worse is the just jelly kind, where there is nothing even remotely "cranberry like" that is visible. Solution: make your own.




Here is your line up! It's so easy it's crazy. I used organic cranberries, I find them at stores like Natures Fare and Choices this time of year! They come in the perfect size that 2 bags does the trick and you aren't stuck with an over abundance.



I placed 3/4 cup of Bourbon, 1/2 cup of water and 1 cup of organic cane sugar in a pan. Bring this to a boil to melt down the sugar.





I added 1 full bag and 1/4 of the second bag in the pot right away. Now here is where your personal preference comes in. I leave out 3/4 of a bag of cranberries because I like my sauce to have some whole berries in it when its all finished. If you prefer more of a consistent jelly style sauce without chunks of cranberries, put both bags into the mix right away. I should mention that it's roughly 4 cups of berries total, give or take. Boil this down until the berries start to burst and render down. The sauce itself should start taking an overall red colour and start to gel from the sugar. Once you feel like you have that consistency starting, this is where I add in the remaining berries. Below shows a good picture of the two different textures. You still need to simmer this mix for 7-10 minutes because you do want the second wave of cranberries cooked so you don't end up with tart bites. You just don't want them fully broken down.


The cooking process cooks off the alcohol content from the bourbon, but it leaves a unique and bold flavour that compliments the tartness of the cranberries. I've seen other versions with Triple Sec and other more orange flavoured liquors, but I honestly like this better. Have fun with it and experiment!



The Recipe:


3/4 cup of bourbon, 1/2 cup of water and 1 cup of white sugar.


Bring to a boil.


Add 3 cups of cranberries to the pot and stir until the berries render down.


Add the remaining cup of berries at this point and simmer for an additional 7-10 minutes.


place in a bowl and chill.
