Bruschetta Chicken, CousCous and Asparagus

A healthy fresh meal that whips up in no time at all.

Some times I'm just down for a veggie packed easy meal... how about you? It feels like it just recharges and nourishes your body and I like that... it's also part of the reason I try and eat mostly organic but at least chemical free food. I also live a busy life so simple is a good thing. Despite how pretty this is, I would clock this at 25 minutes... if you use a BBQ to cook the chicken even quicker!




There are numerous stores that have jumped on the band wagon of branding their own antibiotic free meats. I love this, it keeps the cost down for me and gives me the ability to have a cheaper option when I can't find organic meat on sale. There is a high likelihood that these brands are still feeding their animals with GMO grain products and perhaps their "free roaming" is restricted but my kids aren't eating antibiotics or hormones.


I simply sprinkled these with some Italian seasoning and avocado oil and placed in a 375 degree oven for 20 minutes.




Wow this will be a short post as it turns out..... I took the next 5 minutes ripping the stems off organic asparagus and steamed them. I also chopped up some Roma tomatoes left over from my garden and a red onion. But as an aside... my tomatoes were strange this year... late yield in October with my first red on coming on site late September! Who knew! I also use no pesticides in my garden.




I mixed the chopped tomatoes and onions in a bowl with some ripped basil leaves.

I tossed in a touch of avocado oil and pink salt and set aside to marinate a bit.




I love organic couscous, and I cooked this up in in a pot. It takes 10 minutes tops, so convenient!!


To plate out I have cool little square bowls and to add to the presentation, I like to spoon my couscous into them press down lightly and turn over on the plate. It creates a fun little couscous pyramid and adds to the plate presentation.





I then placed the chicken to one side and spooned the bruschetta mix on top and my steamed asparagus on the other side. My fav for both flavour and presentation is balsamic vinegar reduction... which you can totally get creative with on the plate!! This was absolutely perfect!!! Tasty fresh and delicious! Hope you try it on your busy nights!
