Bruschetta Chicken with Spaghetti and Grilled Peppers
This was a very tasty light meal, loaded with veggies and flavour!
There is nothing like BBQ chicken and there is also nothing like bruschetta! But what if you could put them together! This meal was quick to achieve, packs favour and makes you feel like you ate your veggies all at the same time! Win Win Win!!
To start the chicken was a quick dry rub of garlic, dried minced onion, oregano and pepper... these, when ready get tossed on the BBQ.. drizzle with some oil and place on the grill until cooked.
The bruschetta is as expected.. diced tomatoes, cilantro, red onion and drizzled oil and balsamic vinegar. Chop these all up and allow to marinate for a while!
I chose to serve this with a spaghetti with a marinara sauce which is simple but the roasted balsamic peppers really made the meal! I quartered these after removing the seeds and core and sprinkled with some balsamic vinegar and the same seasoning as the chicken and wrapped them in tin foil and put it on the BBq with the chicken to cook.
Roasting the veggies in tin foil while grilling chicken on the BBQ is as easy as it gets... time this with boiling a pot of spaghetti and you have a gourmet meal in 25 minutes!
The chicken turned out amazingly tender and delicious! The perfect canvass to both hold its own flavour wise, but also let the bruschetta topping shine! Plated out with an additional drizzle of balsamic reduction, this is a company worthy dinner full of nurtients!
The Recipe:
For the chicken
Select 1 quality breast of chicken per person, I choose chicken that is either organic or at least antibiotic free.
Sprinkle with oregano, garlic powder, minced dried onion and pepper. There is no precise amounts just coat the top well and then drizzle with oil.
The bruschetta is simply diced tomatoes, cilantro and red onion, some olive oil and balsamic vinegar and allowed to sit and marinate!
Quarter a red and yellow pepper and drizzle with balsamic and some onion flakes, garlic powder and pepper prior to wrapping in tin foil and placing on the BBQ with the chicken. Do not put on direct heat, this will cook well just with the residual heat in the BBQ with the lid closed. Once cooked, plate and re-drizzle balsamic reduction.
Cook up some spaghetti or whatever side you choose. Toss with marinara sauce. Plate out while hot... placing the bruschetta on top of the chicken but letting it creep a bit onto the spaghetti creates a fluid dish! I hope you enjoy!
