Copycat Nando's Chicken with Homemade fries and Salad.

A Healthier natural version that has all the same flavour profile because it uses the authentic sauce!

So is this a cheat? Probably, but I like to control the quality of the meat I use! Couple that with making french fries from the potatoes I grew in my back yard is a win in my books.






I am down to my last few potatoes so they are a blend of russet and yellow potatoes of varying sizes. But these make awesome rustic french fries... the kind with a crispy skin on it and a ton of salt!... love that kind! I cut these babies up to make a thick fry to whatever ability the unique potato could provide! Dusted them with avocado oil and placed them in a 375 degree oven to cook for about 30-35 minutes with a toss somewhere in the middle.




The chicken was a free from antibiotic and hormone free chicken thighs and drumstick . I placed these in a bowl and marinated it in Nando's peri peri sauce for about 2 hours. This is why I call it a cheat... I literally used Nando's sauce... but it was at home, less expensive and hello!! Antibiotic and hormone free!!


These were best on the grill to give that crispy charred flavour... check it out... this is where I think I might prefer my homemade version better than the actual thing. Make sure to re-baste several times during the process.



ahhh so juicy on the inside and crispy skin on the outside! It's ridiculous how good these are!






I tossed a simple green salad packed with healthy veggies, and didn't plan a dressing because some times, people want to pick what you have in the fridge! right? Once the fries were done, I coated generously with pink salt... which is a very healthy mineral for us! It is said to increase sleep quality, reduce signs of aging, improve respiratory disease, balance the bodies pH, and regulate blood sugar. I'm not a doctor so I don't know if that is all true but it certainly can't hurt as we do need healthy sodium in our diet!


All together this was a healthy. spicy meal that definitely contended with the real thing flavour wise.






The chicken:


Marinade whatever cut of chicken you choose in peri peri sauce. With skin is better but skinless is also okay.

Place on the grill and cook until it hits 165 degrees internally.


Fries:


Cut up potatoes into large wedges

drizzle a high heat oil on top.

Place in a 375 degree oven for 30-35 degree oven, toss once in the process. Wait until the outside is crispy but the inside is still tender, so do not cut them too thin.


Salad:


Do your thing.... :)
