Crab and Shrimp Tacos with Blueberry Street Corn Salsa!

This is epic and flavourful! A treat taco that is actually minimal work!

I've missed a few taco Tuesdays, I lacked some inspiration in this area. Don't get me wrong the foodie vibe in me is flowing but I had so called "writers block" for tacos! Then my blueberries stared bursting in my back yard! I had so many I was at a loss! Sure my kids eat them plain but not at this amount!. When you grow them yourself they seem to come and go at about a 3 harvests spacing and then your done... not at all like the "season" at the super market where we benefit from a series of climates perks. Not complaining.... it made me think and develop new ideas and I truly believe this one worked!



I've said it a few times that this little hidden jem from Walmart in the West Coast was a treasure! So cheap, great quality and well.... I stocked up! I added these to shrimp as the protein base and the rest was history.






This whole taco is unorthodox! I used up organic kale, some organic black beans and organic corn to make a salsa! Weird right? But it worked... add a bit of cumin spice, chili powder, mayo and chipotle sauce and the fruit and veg that accompanies the crab and shrimp base is unexpected and delightful! Wait! I forgot to mention I added blue berries to this mix. It added just the slightest punch of sweetness... It worked.



I pan fried the salsa to warm and incorporate the spices.




I then layered the protein base on the taco shell



Layered with salsa this looks pretty good!
