Dairy Free Beef Tortellini

I can't take credit for the tortellini, but I was so excited to find a brand that did not have cheese in the stuffing, I had to make it!

I guess I will start with some questions.... what is your favourite pasta type? and do you love it full of veggies? or just plain and simple? For me, I love to load up a pasta dish with veggies, as many as I can find, as long as I feel like they keep the theme of the meal... no broccoli on this one :)


I did decide to maximize flavour with some of my favourites though: artichoke hearts, mushrooms and red peppers. I made sure to saute these in advance with some high heat oil. I might be the only one that likes all of these flavours, so pasta night in this house is a build your own experience!



The one thing our family doesn't argue about is a quality steak! I pre-seasoned these with steak spice and let them come to room temp before they hit the BBQ to cook!


They turned out lovely!!






In the mean time check this out.... my new pasta love!!! It's not organic, but I'll live because they are dairy free and I have missed tortellini! It is one of those meals where comfort wins!




I cooked these up in boiling water while the steaks cooked on the BBQ. They paced each other nicely! I then plated out the tortellini. I forgot to mention I was also simmering my favourite tomato basil organic tomato sauce!





Layer layer layer is the next step!!










and add those veggies to your hearts content! It was a hit in this house, and while I can't take complete credit! I certainly loved how quick, easy and tasty this meal was!
