Dairy Free Jalapeno Poppers

These are amazing and truly save the day if you cannot eat dairy and missed these like I do!

I loved my husbands jalapeno poppers, they were cheesy goodness with an explosion of flavour. He would smoke them on the Traeger and the wood smoke would envelope the bacon and make these the best thing ever. Do I have your attention? Do I have you hungry?

Great news, here is how you make these dairy free.

I loved that I found organic jalapenos, total win in my books. I started out cutting these in half and coring them out and washing away the seeds.

Here is the magical dairy free filling... and let me tell you it was flavourful and delicious.

50/50 blend of hummus and cashew spread. I used the roasted garlic hummus which is easy to find anywhere, but I would not necessarily blend a different flavour of cashew spread with it. Stick with one plain and one flavoured. That said some of the other cool flavours like roasted red pepper etc, would be amazing too! I also blended in some dairy free cheese blend, white is better. Not too much though! I then piled the filling into the jalapeno's generously.

Once filled, I wrapped half sections of bacon around the jalapenos. I put my Traeger to 180 degrees and placed them on the grill to smoke.

I chose to smoke these for about 45 minutes but then needed to rush them for our guests that were soon arriving, so I popped these in the oven at high broil to crisp up the bacon.

As you can see there is some filling waste...well.... not waste.. it's still delicious but its more the pleasant little treat for the chef that does not get plated to serve. I scooped this up and plated it out and let me tell you, they were a hit. I can honestly say, while they did not taste exactly the same as the cream cheese and cheddar cheese version, my dairy compatible dinner guests loved them... win and win!!!
