Giant Dairy Free Cast Iron Skillet Cookie

Cooked on the BBQ!

This is my new favourite thing to do! It was both easy and there is something about carving yourself off a wedge of cookie that just feels amazing ! I love that it is both dairy free and organic... I can almost convince myself it's healthy! And well it is in theory.. at least I will go with that! I started out with 1 1/2 cup of organic all purpose flour, 1 Tsp of baking soda, 1/2 Tsp of salt in one bowl. In a second bowl I mixed 1/2 cup of earth balance vegan spread with 1/2 cup of organic coconut sugar and 6 Tbsp of organic cane sugar and blended well with a hand mixer. I added in 1 Tsp of vanilla and 1 large egg.




I then slowly added in the flour mix to the wet and started to form the dough. I then added in 1 cup of dairy free chocolate chips. The mix should be solid but wet as shown below.


I spread the dough into my cast iron pan and pressed it into all the sides, while I started to pre-heat the BBQ to 350 degrees. I have a 3 burner system so I generally only put on the 2 outer elements and place the cookie in the middle or move it around to get all around cooking and heating without burning.





I placed this on the BBQ and closed the lid, monitoring that the heat remained consistent. This took about 17 minutes to cook, but you need to watch it as the difference of a minute can mean scorching the bottom. In fact I had one end a bit close to the direct flame and was a bit darker than I would like.... It was completely salvageable though.








The Recipe:



Pre-heat your BBQ (or oven) to 350 degrees

1 1/2 cup of organic all purpose flour, 1 Tsp of baking soda, 1/2 Tsp of salt in one bowl.

mix the wet and the dry together and form a dough. Add in 1 cup of chocolate chips.


Place in your skillet and bake or BBQ for between 15-17 minutes.
