Gluten & Dairy Free Corn Fritters, with a Sesame Soya Aioli!

A delicious appetizer! With a hint of cumin that blends well with the unique sesame soya aioli!

These Corn Fritters are versatile!!! They make a great appy!.... they blend well with a soup! they compliment fried chicken and mashed potatoes! Versatile! Here is the appy version and I encourage you to play with it!

These are very easy to make, they can be made with or without cumin, but if you like cumin I highly recommend you add it! The flavour is amazing!

I added 1 cup of gluten free flour, 2 eggs and 3 cups of thawed corn, 1 Tsp of baking powder, 1 Tbsp of garlic powder and 2 Tbsp's of Cumin powder. I mixed this up to see how the consistency went as is. If you find this is too dry and does not become pliable to create patties or balls. If it's too dry add some cashew milk 1 Tbsp at a time until, you can in fact form a ball. If you go past 2 Tbsp's consider a third egg instead!.

From here form patties... Add some oil to a pan and fry the fritters on each side until golden brown. Turn the oven on to 350 Degrees in the mean time.

Once fried put these in the oven for 15 minutes at 350 degrees while you make the aioli.

Does this aioli sound strange to you? I can see that... but this goes so well with cumin and the two flavors play off each other. If you leave the cumin out of yours...compliment with any aioli you like, Dijon, lemon, chipotle! The sky is the limit... but if you do add cumin... seriously give this a try!

Start with 1 cup of mayonnaise, 1 Tbsp of soya sauce and 1/2 Tbsp of sesame oil... mix and taste! This is great as is... if you like more soya forward you know what to do! as is true if you love the toasted flavor of sesame oil.

Cut up some fresh cilantro... this herb is not just a beautiful garnish but seriously adds to the flavour! Plate this out and serve warm! I hope this is a unique appy that you will try with your 2 to 5 guests (if you live in BC given new Covid standards.) I'm sure you are all just as excited to cautiously experience real humans you don't already live with... and this is a great appetizer choice to hit that off!
