Grilled Country Style Ribs with Mango Salsa

These ribs were dry rubbed with a Chipotle Mango rub, grilled to perfections and cooled down with a fresh mango salsa and a salad!

I love country style pork ribs.... they have some fat to them that renders down while you grill them that I think really adds to the flavour. I do sometimes cook them in the oven but for this particular meal I really wanted to get that summer grill flavour, along with some sweet and spicy attributes.


I like making my own rubs, but sometimes you just can't beat the pros, and when a stor bought spice blend is good.... well then why mess with it



Clubhouses La Grille Chipotle mango is awesome. It is quite spicy but has that mango flavour in it to be sweet at the same time. I generously dry rubbed this seasoning onto my pork ribs and let them sit.





I got to work on the mango salsa! I had a few on hand so I diced them up and placed in a bowl.




I have an incredible amount of cilantro growing in my back yard, so this was another perfect opportunity to make sure it does not go to waste!




I also diced up some red onion and started blending the salsa well to incorporate the flavours and juices together. I also added a few squirts of lemon juice as well.




Once the salsa was complete, I tossed up a quick salad and then placed these ribs on the grill to cook.



I made sure these got to an internal temperature of 160 degrees and got to work plating this out! Honestly this was so light and delicious! Perfect for a hot day.... I hope you give this a try. The Recipe:


1 country style pork rib per person, generously seasoned with chipotle mango seasoning.


For the salsa,


2 mangos diced, 1/4 red onion diced, 1-2 cups of chopped cilantro. 1 Tbps of lemon juice.


make a fresh salad and serve with dressing of choice but an oil or vinegar based would probably be best for the flavours.
