Homemade Cast Iron Organic Apple Bread, but I made the Apples Too!!!

Well I grew them, but it feels good to know where the apples came from too!

I'm probably getting broken record like (just wait til next year :) ) but I have a lot of apples to contend with... and I insist on using what I "make" or I guess.... grow.


This bread is not high in sugar, so I have served this as breakfast... thrown some dairy free vanilla bean ice cream and it's desert... no matter what it was delicious and healthy.




I chopped up some of my apples





Here is the mix for the bread:


1 1/2 cup of flour

1 3/4 tsp of baking powder

1/2 tsp Himalayan pink salt

3/4 Tsp cinnamon

1/2 cup of dairy free butter like earth balance

1/2 cup of coconut sugar

2 eggs

2 tsp of vanilla

1/2 cup of pacific food brand cashew milk







For the Apples:


Place 3 apples cubed on half the dough... with 2 Tbsp of coconut sugar and 1 Tbsp of cinnamon




I layered these on an oiled cast iron skillet



and then added more dough




and more cinnamon and sugar





I then placed this on the BBQ... what I did was place one side on high heat and then placed the cast iron on the side that was off and closed the lid. This is a fine art because our temp gauge needs to read on the most part about 350 degrees for this bread to cook well. It will not do well with direct heat but it can withstand some variability. But you want to cook this for about 45-55 minutes until the toothpick comes out clean.





It was beautiful and delicious and I loved my first attempt at baking on the BBQ! Delicioso!!
