Homemade Sushi!

Gave this a go with the kids and not only was it a healthy and delicious option to restaurant sushi, it was a fun family activity as well! Spicy dynamite, California, teriyaki chicken, cucumber and avocado rolls!!



So I owe the inspiration for this meal entirely to @chef_chrissys_bbq who posted hers on Instagram... it looked delicious and I have always wanted to try it! Not only that, it was a fun way to spend time with my kids and created some buy in for them to commit to eating it!


I'll start with the prep work. Given that I was doing several types of homemade sushi rolls, I saved myself some time by using store bought teriyaki sauce for the teriyaki chicken rolls. The C2's favourite kind! I took some antibiotic free chicken breast and cut them into small cubes and marinated them prior to stir frying them. I also cut up cucumber in long thin strips!





I also used two cans of real crab meat and mixed with mayonnaise for the California rolls and to add into the dynamite rolls. I found "torpedo shrimp" in the frozen food isle that were already made and dead straight; which I thought would make rolling easy. So..... I grabbed these instead of breading my own shrimp.... maybe next time I'll put in the additional effort and make my own with panko!



I cooked up a large batch of sushi rice, and we got started with our creations!



We tried out the rice on the inside and rice on the outside, both rolled well! Especially since my friend lent me her sushi press! Definately made the process easier!




I found you need a really sharp knife to cut these without damaging their form. I used my shun knife and it did the job perfectly! #shunknives


All and all, it was far easier than I anticipated and proved to be both a fun meal to make, and delicious! I used peri peri mayonnaise to create the "Hot" dynamite rolls, and drizzled some teriyaki sauce over the chicken teriyaki rolls for presentation and enhanced flavor! I hope you try it!









The Recipe


I placed two cups of sushi rice with 4 cups of water and a Tbsp of oil in a covered dish and microwaved for 20 minutes.


For the Crab, I simply placed two cans of real crab meat in a bowl and mixed with 3 Tbsp of mayonnaise.


I cheated on the tempura prawns but the store bought variety I purchased required 20 minutes in the oven to bake.


I sliced up some cucumber length wise to create thin sticks. I skinned an avocado and cut into slices as well.


I took chicken breasts and cut raw into small cubes and marinated with store bought Teriyaki sauce. I stir fried the chicken on the stove until cooked and set aside to cool.


We then got to wrapping and I would say your imagination is the limit with this! Enjoy and let me know if you try it!!
