How to feel Ok about the snacks your kids want to eat...




So my kids like cookies... shocking I know. But my kids are picky... and I've been there and done that about hiding bananas, zuchini and apple sauce in there...they bust me every time! although my avocado brownies haven't been picked off yet... perhaps for another post!


My biggest issue with food is the words we can't spell or understand, and this blind faith that our governmest regulates what is bad for us. While I don't think everyone is out to get us and give us cancer, I do thing the "loop holes" companies find to sell us cheap fillers, if even for a short period of time before items get regulated, have the ability to hurt our bodies! My mantra.. know what you are eating... to the best of your ability....period.


This still means we can eat cookies!!



I start with organic salted butter at room temperature and blended it with my go to sugar... coconut sugar which has a lower glycemic index than regular sugar and does not affect the taste. I also add Organic vanilla! #simplyorganic


Next I blended my dry ingredients... but I have a secret. I live on the Ocean but a bit above sea level, and your elevation does affect your baking believe it or not. The average cookie does not usually require baking powder but above sea level I add it to most baking items because it keeps dishes meant to be light and fluffy staying that way, when geographical height can work against you. It can truly be the difference between fluffy and flat cookies for a simple teaspoon of effort! Again I go with Organic ingredients when available. I find Superstore in Canada offers a great store brand of Organics for only a small price increase to regular items making avoiding pesticides and fillers a reasonable venture for most families. #pcorganics #superstore



Slowly blend the dry ingredients into the wet... and add organic chocolate chips!



This is in my opinion the best brand for price and flavor..



Roll out into 1 inch balls on a parchment paper lined baking sheet and refrigeration for a minimum of 30 minutes. This step is super important and should not be skipped unless you enjoy flat cookies.. no amount of baking powder can save you if you skip it! lol




Bake at 350 for 10-15 minutes, do not over bake.

These are honestly a crowd pleaser... I have modified these for dairy free as I cannot eat dairy and I will sub the butter for #earthbalance organic spread and there is no difference in taste in my opinion (from what I can remember before realizing I could not eat dairy) I recently served these for two dinner parties in a row Sunday and Monday night! it was a hit and technically "fresh baked" each night when I popped the pre-prepped dough in the oven! Look at how these babies turned out! I hope you love them!
