Korean Short Ribs, with Asian Noodles
With an appetizer option, this meal can multi task for any occasion!

This was an amazing meal! The ribs were to die for. They were the free from brand from Superstore so there were no antibiotics in these! That makes me happy. I purchased them as full ribs so I needed to cut them down into the individual ribs to prep for their marinade.
Once cut up place the ribs in a marinade of sesame oil, soy sauce with some pink salt, garlic powder and pepper. This needs at minimum 20 minutes to marinade... 24 hours is better!
Once these are marinated .. coat them with flour !
Cook the now flour dusted pork as is in the oven on a parchment paper lined tray. Cook at 400 degrees and flip half way through. These should crisp up!
I placed 3/4 cup of soy sauce, 1/4 cup of coconut sugar, 2 Tbsp of rice vinegar and 1 Tbsp of sesame oil along with some minced garlic and red chili flakes into a frying pan. I brought this sauce to a boil and watched it thicken up slightly. I lowered the temperature and threw the ribs into toss in the sauce and ensured they were evenly coated.
In the mean time for the meal version I boiled a pot of water for noodles.
I started cutting the veggies! I chose veggies to keep to the theme of the dish so bok choy, crimini mushrooms and red onion. You could really choose anything.... broccoli would work well also!
The sauce for this was 1/3 cup soy sauce, 1 Tbsp of sesame oil 1 Tbsp of avocado oil, 2 Tbsp of rice vinegar and some minced garlic.
I sauted the veggies in this sauce and then simply poured the remaining sauce over the noodles one plated with the veggies on top! This was a healthy and delicious meal that was quick to make!
But wait! I promised an appy out of this too! You could really pick whatever aioli you want I had thought about cilantro or even a Chinese 5 spice blend... the options are endless.
I experimented a little and went with lime and dill... I know that doesn't sound like it would go, but it really actually did!
The Recipe:
Purchase "sweet and sour" cut ribs. These are the narrow cut ribs, but will need to be cut into their individual ribs.
Marinade for at least 25 minutes with:
1/3 cup of soy sauce, 3 Tbsp of sesame oil
1 tsp of pink salt
and 1 tsp of garlic powder.
dust in flour and then bake in the oven at 400 degrees for about 30 minutes flipping at the 15 minute mark.
In a pan saute:
3/4 cup of soy sauce,
1/4 cup of coconut sugar,
2 Tbsp of rice vinegar and
1 Tbsp of sesame oil
some minced garlic and
red chili flakes
once this mix thickens slightly toss the fully cooked ribs in the sauce and coat fully.
The vegetables are:
cut bok choy, cremini mushrooms and onion.
Saute these in a pan with 1/3 cup soy sauce, 1 Tbsp of sesame oil 1 Tbsp of avocado oil, 2 Tbsp of rice vinegar and some minced garlic.
Boil some spaghetti or asian noodles and serve with the veggies and the remaining sauce on top!
