Mediterranean Pork Chops with Artichokes and Olives.

I love pork chops.... Have I said that before? They are so quick and easy to cook, and so versatile as well. Let me tell you.... these were among the best, if I do say so myself! Anything that incorporates a lot of veggies, adds so much flavour and nutrients to the mix... ahhh see? I can't stop talking about it! It was also simple for a week night!
I seasoned these chops with a simple blend of Italiano, celery salt , a spicy seasoning herb blend and some dried basil! Totally in keeping with a mediterranean vibe! I placed these in a 350 degree oven for about 35 minutes. Internal temp should be 160 degrees. 35 minutes is about the timing of this whole meal, so it's convenient for a busy night!
I chopped up some white onion and added them to a pan with pre-sliced artichoke hearts and green olives. About 10 minutes before the chops are ready, turn the heat on under the pan and add some high heat oil. You can season these, but in my case the artichokes were marinated so I just allowed that and the vegetables natural flavours to shine through. They take not time at all, just cook until the onions are soft and translucent.
Another easy side is Couscous! This one is organic so "heart!!" I love it also! It's fool proof to make and I can't remember a time it wasn't finished in under 10 minutes.
Again with my quick posts... but I suppose that is the point of my meals... if people can cook it quickly, its hard to talk about for a long time... right?..... I will say I steamed some asparagus and cut up some fresh cucumber as sides! But gosh ... how do you talk about that like it's hard? Let's plate out.... It's my favorite part anyways... showing you how things turned out. My biggest goal is to send some cool ideas out and the plate looks pretty and delicious and when I tell you it's a 35 minute investment in your evening.... people decide to try it out.... did you?
