Organic Dairy Free Chocolate Chip Pancakes with Fresh Fruit Medley!

Had my nephews over for a sleep over! We are social distancing together so to speak so we can make the best of covid times and still make great memories for our kids (the C2's) . What is the perfect ending to a great sleep over? A fun breakfast! It can be healthy at the same time, which seems to be my requirement...Especially since I have a ton of blueberries and strawberries growing in my backyard. Presentation can and will make kids eat their fruit and veg and this fun breaky was no different.



For the batter I used 1 1/2 cups of organic flour, 3 1/2 Tsp of baking powder, 1/2 Tsp of pink salt, 1/4 cup of organic cane sugar, 1 organic egg 3 Tbsp of earth balance spread melted, and 1 Tsp of baking soda. I blended this well but not too much as its a simple batter and if you over mix it, it turns stiff.




Once mixed I added Camino chocolate chips as they are free of all common allergens including dairy and tossed lightly before adding to a lightly greased Forman Grill to cook the cakes...




Meanwhile I cut up the watermelon, and sprinkled blueberries and strawberries from my garden amongst them and got ready for the presentation.
