Organic Dairy Free Pumpkin Pie!

You heard me correctly.. this dish that usually contains condensed milk, made dairy free!

I absolutely love pumpkin pie! It was my favourite part of both Christmas and Thanksgiving dinners! When I realized dairy did not love me back, realizing this delicious desert was out was a hard blow for me... I literally mourned it and I truly felt a single tear well up in my eye as I watched my family enjoy this pie without me. That's motivation for creativity... no?


So I'm giving away the secret right up front! Sweetened condensed coconut milk and an organic spelt crust!





So this recipe take the following:


4 large organic eggs.

2 195 ml cans of condensed coconut milk and 2 cans of organic pumpkin.

(you can use the pumpkin pie mix in a can, that simply means do not add the spice mix at the end because your can already has it. Got it? good)


This makes 2 pies... which is awesome, because these pies actually freeze well! Bonus!



Mix these all together with a hand mixer until smooth! Now the only issue you can have with condensed coconut milk is that it hardens quickly when cold. My recommendation is that you warm the canned pumpkin just slightly before adding the eggs and the coconut milk. The more room temp your eggs are; the better as well! This way you avoid the small pearls of hardened coconut.




The spice mix is the following:


2 tsp cinnamon

1 tsp ginger

1 tsp nutmeg

1 tsp pink salt


mix that in as well












Place the mix in the raw pie shells ad get ready to bake.





Here's the baking instructions:


Preheat the oven to 425 degrees.


Place your pies low in the oven and cook for 15 minutes.


Drop the heat to 350 degrees and cook for an additional 40 minutes. It may take longer but the goal is golden brown and the toothpick comes out clean, keep checking at 5 minute intervals after 40 minutes.



Perfectly golden brown.... I did end up with a split in the middle so perhaps no pro baker worthy but delicious just the same! I sincerely hope this brightens one ore more of your day and brings back a food item you love and thought you lost! Enjoy!
