Peach & Mango Gin & Tonic Slush

Gin and Tonic with a Fresh Fruit Twist!




So we have hit several weeks of quarantine and I feel like it sends you through the various stages of grief! You first go through Denial..... this is blown out of proportion and won't last very long, Anger... why don't the people in my life recognize how serious this is?? Bargaining... how many of my kids would I truly be willing to give up for a roll of toilet paper? lol (hopefully) Depression.... I'm stuck, with these people forever... I should have done the kitchen reno I wanted last season! I never wanted to be a teacher this is F*%#'d! To finding our way to Acceptance! To me it looks like this.....


Just before quarantine, I had a day planned with my sister in law Aisling, who I would also call one of my closest friends. It was epic (for me at least) I had an RMT massage that morning, met her for lunch and drinks only t0 be followed by a shellac manicure and a facial at Casbah Spa. A complete spoil fest! #spoilfest2020


I thought our pre-drinks looked amazing so I took this photo... if only I knew then I would look back on it screaming "let me out!!" Thank you Cactus Club... we miss you #cactusclub




Anyhoo… I've hit acceptance... although I've heard its a sliding scale and you can transition at will! But none the less, I live on the shore just outside of Vancouver and see the ocean from my house! My friend Charlene who is an inspirational life coach www.charleneforbes.com says you can't feel stress when you are looking at water... so I have taken that to heart... especially with the nice weather! So I thought... lets build off some inspirational Pinterest leaders and find something new to drink while looking at the water and "de-stressing" ... at least to me!


I found www.howsweeteats.com with a peach gin and tonic... her photography is amazing and the drinks looked great! I thought to myself though... how long does it have to sit for the peach flavour to saturate the gin? Not sure I have that long? My solution? Turn it into a slushy!



I took 2 whole fresh peaches and some frozen mango and blended it in my Ninja food processor with ice cubes and 3 shots of Gin (don't worry this lasts a while) I blended them all t0gether to create a slush.



I then poured them out in Martini glasses, given I was trying to re-create my awesome spa day (at least in my head) and topped the slush with some tonic water and a sprig of sage from my garden!

















The Recipe:


3 oz Gin

2 whole Peaches pit removed

1 cup of cup mango

1 cup of ice cubes


Blend well together to create a slushy


Fill glass half way and top up with tonic water or flavoured sparkly water.


Top with a sage sprig... enjoy
