Pineapple Jalapeno Chicken Thighs with Dairy Free Stuffed Jalapenos

I really enjoy strong bold flavours, and this meal checks all the boxes for me. It was honestly easy to boot, so this dish will likely go on heavy rotation at my house.






















I started with chicken thighs, sprinkling them with avocado oil and Italiano seasoning and placed in a 350 degree oven for around 45 minutes. What could be easier than that?



I then cored some jalapenos and chopped up some portabella mushrooms, red peppers, pineapple and cilantro. Put these to the side until the chicken is nearly done.



I found this amazing Tequila lime marinade that has amazing flavours. I wouldn't bother trying to recreate this my self... it was way to convenient and tasty to just use this marinade. Once the chicken was almost finished I drizzled the tequila lime sauce over top to glaze in the oven. Around 5-10 minutes before you are ready to serve.



From there I placed my chopped fruit and veggies in a pan and also topped them with the tequila lime marinade, and started to sauté until cooked.






I set up my plate with some fresh salad. I chose some chopped romaine, cabbage and cilantro. This did not need a dressing because the sauce drips through to flavour the salad as well. I then plated out on top of the salad, nesting the chicken first and then topping with the pineapple jalapeno mixture.






But I also wanted to add another dimension to this and as you can see the meal itself was so easy, I had time on my hands while I waited for the chicken to cook. I decided to experiment with jalapenos. I had previously made chili rellenos which were super tasty... you can check out that recipe here>>>>>>> The process for prepping the chili was to bake them whole in the oven to scorch the skin and soften the pepper. I tried this with some of the remaining jalapenos... and guess what? It worked.



Once blasted I made a cut along the side of the pepper and scooped out the seeds.



Obviously these needed to be dairy free so I mixed up a dairy free cheese blend, also using this amazing tzatziki flavoured cashew spread.



I stuffed the mix inside the jalapenos, topped with some additional dairy free cheese, some seasoning and baked them in the oven.




I added these to my meal as an additional fun side, but I think these would actually be a fun appetizer as well. They plate out nicely either way and the flavour of these was pretty delicious.
