Pork Dry Ribs!! A Pub Fare Classic from Home

I love dry ribs, they are crisp and salty and if done right juicy in the middle. But like most of my posts, I don't love the fact that these are typically completely deep fried when you go to a pub. I try and make it with a bit less oil by incorporating baking into the mix. But I swear you don't notice the difference!
I purchased antibiotic free pork ribs that were pre cut to the "sweet and sour" size, so skinny ribs! From there my only labour was to cut between each individual rib to create my riblets!
These ribs needed a bit of marinating to enhance the flavour. I'm not sure pubs do this, but OMG I highly recommend it.... the flavour was awesome.
I placed all riblets in a sealable bag and added equal portion of soy sauce and rice vinegar. about 1/4 cup each, and 3 Tbsp of sesame oil. 2 Tbsp of garlic powder and 1 Tbsp of onion powder. These marinated for 3 hours, where I flipped and rubbed them through the bag multiple times throughout.
When it was time to start cooking them, I set out some organic flour in a bowl and started the process of dredging them through before hitting the pan with some high heat oil. I also added some steak spice to them as they fried. Check out some of the items I used to make this on Amazon!
I fried these in small batches in shallow oil. I did not want to fully deep fry these at all I just wanted to get a nice browning on each side.
Once all of them were browned I placed all of them on a baking sheet and placed them in a 350 degree oven to cook through.
I used my temperature probe to ensure these hit 165 degrees internally but pulled them out right away so they remained juicy inside.
I plated out in a shallow bowl lined with paper towel which looked fun and pub like but also helped with any oil left over. I paired this with a dairy free ranch dressing and served. This was actually a dish I brought to a dinner party. I was impressed how well it transported. I simply pulled it out of the oven immediately before heading over and they stayed hot and juicy!
The Recipe:
Cut sweet and sour style pork ribs into riblets and place in a sealable bag.
Add 1/2 cup of soy sauce and rice vinegar to the bag. Add 3 Tbsp of sesame oil 2 Tbsp of garlic powder and 1 Tbsp of onion powder. Marinate for as long as possible.
Dredge through flour once ready to cook and bplace in a pan with high heat oil. Brown both sides adding some steak spice for extra flavour. Place on a baking pan and once all of the riblets are done, place in the oven at 350 degrees and cook until the internal temperature is 165 degrees.
serve with ranch dressing.
