Roasted Pumpkin Seed Cilantro Pesto Shrimp

An incredibly easy appetizer that looks incredible and has a dairy free unique pesto flavour!

Shrimp, Shrimp and more Shrimp! I could eat them constantly and why wouldn't you? They are a clean healthy protein, with a ton of flavour that makes a meal feel fancy!!


I also love this pairing with roasted pumpkin seeds instead of the traditional pine nut for the pesto, and who am I kidding I subbed in cilantro for basil too! Oh and no cheese! I had a ton of roasted pumpkin seeds on hand from Halloween, roasted well, salted and in the fridge you can enjoy these babies for a while. This was a great excuse to use up a ton of them! As you know by now (unless you are just joining me!) I am dairy free and there are often the little things that have so much dairy in them it would be crippling. Pesto is one of them... every jar I flip over to read ingredients has parm... and why wouldn't it? It's delicious, but man... I just can't! I think this is why I chose to be a home foodie... I can create my own... well .... everything I can dream up!



I started with a full bunch of cilantro, 1/2 cup of pre-roasted pumpkin seeds and 1/2 cup of

cashew cream, plain or a subtle flavour will do! I added in about 2 Tbsp of lime juice and and 1 Tbsp of minced garlic and blended this in my Ninja blender! I love my Ninja! Silky smooth with the perfect tang! From here you should taste test for saltiness and adjust as per your liking!







Boil some shrimp .... need I say more? I picked the biggest I could find, I cooled them down and shelled them leaving the tails on .... you know.... as their "handle." You can use whatever shrimp you have on hand but I truly believe that bigger is better in this regard! Imagine a half lobster tail? oh dear.....







Lay out your pesto like it's the journey to good food... a swirl is my fav, so your guests can eat to the centre! Scatter some roasted pumpkin seeds along the way, that way when they think... this is really good but it has a nuttier flavour than the usual pesto... there is a hint on your plate.... otherwise known as a fun food conversations starter! I will say, people will pick these off and eat them too because they taste delicious all on their own!



Place your shrimp along the pesto path and serve... this works equally good chilled as it does warm so do not limit yourself if post covid you want to impress at a dinner party! #Imisspeople :( Enjoy and lets get creative and share.... anyone have some fun variations on the pesto?? picks, comments? love all of it!
