I absolutely love the ease and the flavour of a rotisserie chicken. This was a 5 minute prep and then I relaxed while it spun itself to deliciousness.

I poured a bit of oil on this bird and rubbed it in, before coating it with my homemade meat rub. You can use any chicken rub or blend of spices you see fit. What works nice is a touch of heat and a touch of sweet.

I skewered this together and placed on the BBQ outside. If you have never used a BBQ rotisserie my recommendation is to only fire up the outside burners and leave the centre off so as not to scorch your chicken. I always put a metal baking sheet underneath with some water in it to catch the drippings and stop flare ups. It also creates a bit of a steaming effect which keeps your bird nice and moist.

Just another tip if you have an additional roasting burner at the back of your BBQ use that on medium heat and drop your two outside bottom burners onto medium too. If you don't have the back burner the two bottom burners need to be hotter or you'll be watching this bird dance for alittle too long. :)

As you all know I like to eat organically or at least as naturally as I can. This chicken was PC free from brand from Superstore, so no antibiotics. All chickens in Canada are steroid free so that is a bonus too. So this means there are only a few brands of french fries or onion rings that I would buy from a store.... I will say there is only one actually... Alexia

So when I had about 35 minutes left on the chicken I preheat my oven and popped these time saving, yet healthy enough I can stomach the treat feature to them... in the oven.

The bird turned out perfectly... crispy skin on the outside and so tender and juicy on the inside... #winning

I cut this up... thankfully with a whole chicken, there is no conflict over who gets what part, the C2's eat the legs and my husband and I a breast and a wing! If you have only ever visited my blog from Instagram or from finding me on the internet... you may not know I also have the same healthy flare when it comes to my dog! If you look around my site you will see I have a section on my dog! I bring this up because if you have a dog, using a whole chicken carcass to make bone broth, it is also amazing for your pet and you can check it out here if you are interested. None the less, when we cook a whole chicken, nothing goes to waste!

This dinner came out with legitimately 15 minutes of work on my part! I made a romaine salad with some cucumbers and peppers. I had to be in the house for about 45 minutes to make it all work, but I was mostly doing other things! I seriously checked the chicken when it had been in for 10 minutes to ensure the skin wasn't getting too cooked too fast (ie: in 10 if you found really dark spots you need to turn the elements down a bit or your outside will be uber done and your inside not so much... that is a terrible surprise at carving!) You will get the feel for your BBQ and will usually end up with some confidence at the 10 minute mark, you are good to go and you are probably cooking for another 30-40 minutes.

Not too shabby for a busy week night! Am I right?

The Recipe:

1 whole chicken

Season to taste with avocado oil and meat rub of your choice

Throw on the rotisserie on medium heat (check at 10 minutes if the skin is just getting golden you are golden... if not turn it down) You will cook til at least 165 degrees.

Oven instructions are cook in a dish at 425 degrees for about 35 minutes. You must reach the internal temp of 165 degrees to be safe!

Grab what ever fries and onion rings you feel comfortable with and follow the package instructions.

Make a salad... so easy!
