Scallops on mashed Cauliflower with Roasted Oyster Mushrooms and Fiddle heads

Oh my friends, I am sure my latest posts have revealed a bit of a trend in my eating habits, namely fiddle heads, roasted oyster mushrooms and scallops. But I think trial and error helps you perfect tastes and I totally think this dish is the perfect amalgamation of flavour. I did it as an appy but obviously this would be a great meal as well! Lets get started.





I love mashed cauliflower especially when it's dairy free. It's easy and quick! Low in carbs, its the perfect potato replacement! I placed small cuts of cauli in boiling water until pierce-able with a fork. I then added spread-em herb and garlic cashew spread instead of the normal dairy and mashed until smooth. Dairy or no dairy, I highly recommend you try this... everyone gets comfy with the regular milk and butter, but the flavour explosion from this spread is out of this world and there are so many options.



I then roasted the oyster mushrooms... adding some italian seasoning and avocado oil. I cooked for about 20 minutes at 350 to make them still moist on the insides but noticeably roasted on the outside.




I also cooked the fiddle heads on the stove, sauteing them in oil and a bit of garlic powder. I moved on to searing the scallops with a light dusting of salt and pepper. The trick to searing scallops is a hot pan and getting a good sear on one side, the flip and getting both sides the level of brown-ness you want but then lowering the heat and covering them, perhaps adding a touch of water depending on how much liquid they naturally release and then steam them to cook through.



From here this is smooth sailing of plating out in an aesthetically pleasing fashion! Which lets be honest is easy given the food you are working with! I promise these flavours work so well together, the mash with the cashew spread melts in your mouth, especially with the scallops, and is balanced by the woody texture and flavour of the fiddle heads and roasted mushroom.... It's a delight!
