Shrimp Ceviche!

This is a show stopper and it stupid easy to make and even has the secret ingredient no one wants to admit to.... Ketchup!

So I realize the traditional Ceviche includes raw seafood... and while that is cool in my book! When I am the provider of food to others, I like to avoid the potential for food poisoning! Especially if it's a dip that sits out for the evening! I've done this with lobster and shrimp (excellent) and just shrimp (people say not as good but are we sure we can tell?) Anyhoo, this one is just shrimp and is awesome if I do say so myself!




I cooked up some shrimp and once cool, peeled and de-tailed them. On the chopping board I cut them so there were decent chunks but enough pieces that you can envision them hanging on to a cracker along with the other ingredients! It shouldn't be "minced" it should look like pieces of shrimp, but small.


For the veggies, you want to dominate this dish with cilantro.... I'm super happy that my cilantro has grown in the back yard! I use it in everything! I use no pesticides so combining this with wild caught shrimp, and organic tomatoes and onions makes me happy!... You will want to cut an equal amount of shrimp to cilantro... the tomatoes and onion should be about 1/3 the volume of the cilantro alone. That is the correct flavour profile but don't stress over it! If you cut up too many tomatoes, throw them in... life is too short!




Now for the seasoning... I love love love cumin and thank god! It add so much to this dish! Generously sprinkle cumin over the dish, and give (initially) only a few grinds of salt, better sagfe than sorry, you can always add more later... toss this around!






Like I said, ketchup... it has a really great purpose in this world, it might be embarrassing to admit it, but it adds flavour in some cases. This ceviche is one of them for sure. Heinz does now make organic ketchup so that works for me! Give a generous squeeze and mix again.. there should be a hue of the ketchup in the dip... It's what holds the dip together.


Serve this up with tortilla chips, or crackers, promise it will be a hit!
