Sirloin Roast with Cabbage Apple Slaw, Onion Rings and Yorkshire Pudding

This meal literally covered all of the bases, and was so delicious.

It's been a while since I posted! It's been busy and a grind lately, but that was also a sign I needed some comfort food. Cozy up at home and share a great meal with your family. A sirloin roast can be one of those meals for me, especially when it's paired will all sorts of excitement! The apple cabbage cooked slaw was incredible but a risk. I love it when risks turn out! Don't you?




I quickly seasoned this roast with garlic and onion powder and some paprika and salt. I threw it on the cast iron to sear on all sides while I preheat the oven to 400 degrees.




Once seared I placed this in the oven surrounded but sliced mushrooms and onions. That is seriously the best smell in the whole world, and definitely added to my "cozy" dinner vibe! You want to quickly cook this to 140 degrees internally. That will ensure you have a great crust on the outside but a tender inside.




Aren't Yorkshire puddings the best? There is something about adding them to a meal, covered in gravy that just hits the spot. It absolutely had to be a part of this meal! As you know I can't eat dairy products, but that does not mean I miss out in the least! These beauties were organic and dairy free and easier than you'd think to make. These are the best, there is nothing like a home made onion ring... the batter is light and airy and perfectly seasoned. They fry up with limited oil on the stove so everyone can feel good about it.

The warm apple cabbage slaw was a risk... but man did it turn out well! I coarsely chopped some red cabbage and added it to a pan with spinach. I also cut up some gala apples in thin slices to add the sweetness.....





The gala apples taste so sweet as they sauté ... use just a touch of avocado oil to ensure nothing sticks.




Some roasted red pepper seasoning adds to the flavour and the depth of the side... at this point I also splashed it with apple cider vinegar to add some tartness back in. If you don't have roasted red pepper seasoning, salt pepper and some garlic or onion powder will also do the trick.... equally an Italian blend works, it is really up to your palate.






The roast will be done at this point and slicing it up shows the juiciness created from the sear! Beyond this I blended a potato and cauliflower mash to accompany the dish. No need to speak to much on this, simply boil both potatoes and cauliflower florets until tender and mash-able, rinse, and then mash with (in my case) vegan butter and almond milk. Make a package gravy that is dairy free and serve out.







This was a meal that a rainy day screams for.. filled with several layers and flavours and will not disappoint!








The Roast:


Sear on all sides on the stove, ideally on cast iron but any frying pan. Pre-season with garlic, onion, paprika and salt. Then place in a 400 degree oven!

Cabbage apple warm slaw:


A hand full of spinach and some coarsely cut red cabbage approximately 1 1/2 cups

1 full gala apple, cored and thinly sliced.

some avocado oil to saute the spinach and cabbage for a while before adding the apple slices and a splash of apple cider vinegar. Cook down.

add in some seasoning as above! and wilt down and cook until warm but still crunchy.


Do this part after your onion rings, mash, and yorkshires are almost ready as it takes little time.


plate out! This will be a great meal!
