Smoked Salmon Lox Appy
with Dairy free Cashew spread, dill, green onion and blasted capers

This is literally the easiest appy ever.... it's the kind of appy that lets you have all the products on hand at a moments notice for a friend that just "pops over" without warning, but equally as decadent planned! It all comes down to the smoked salmon honestly! I have no specific brand recommendations but sustainable or wild salmon is always a win. Then you get into certain smoking attributes which can change flavour like Alderwood smoked salmon... it all depends on your palate.
For this appy I used some whole wheat sour dough which was really good honestly... it still had all the lovely sour dough flavour but at the same time some chunky seeds to contend with that gave the bread some depth.
Because I can't really "do" dairy I opted to change out the usual cream cheese you see with salmon lox, for some really delicious cashew spread for me... and for my dairy lovers out there Tzatziki was a refreshing twist to just cream cheese as well.
The trick to amazing presentation is the "effortless" folding of salmon on top which I can assure you requires effort. That said, however you place your salmon on top the flavour will be delicious... just don't skimp out on the toppings lol.
My favourite part is the blasted capers. Regular un-blasted capers are delicious also but there is something about crisping them up in a pan with a touch of oil that brings out their flavour. It doesn't take long but well worth the effort and the pan.
Layer these together and sprinkle with either dried or fresh dill and shopped green onion and these are healthy and delicious!
