Smoked Salmon Poke Bowl

I'm in love with poke, and I find myself running out to pick one up at work more often than I should... but it's just that as soon as you think about it, you have to have one! Once I started tallying up the costs, I realized I had to find a way to make these for myself.... so I did.
I tried with the raw tuna from the frozen section, and while I trusted that it was safe given its intended purpose was for poke, but the flavour was not the same and it made be nervous, that's when I realized that smoked salmon might be the best way to go!
The base I chose for this was some lettuce, spiralized zucchini, and mango. I layered these on my plate, segmenting out the different elements to their own side.... you know fancy like you get at poke restaurants!
To spruce this up even more I added some corn kernels some pickled ginger and salted dry seaweed. Looking pretty good already right?
The smoke salmon was nicely folded on top and a sprinkling of fresh parsley and green onions added both texture and flavour. The only thing missing was a shoyu sauce which is my absolute favourite part of a poke bowl.
The sauce was pretty simple.... 1 Tbsp of soy sauce, 1 Tbsp of apple cider vinegar, 1 Tbsp of sesame oil. I did a small pinch of coconut sugar and mixed, feel free to add more if you like it sweeter, I also added a pinch of garlic powder as well. Mixed together well and poured over top!
All and all this was easy to put together quickly, held nicely for a chilled work lunch and definitely crushed the cravings for poke! What else would you consider throwing on this? I would love to hear some thoughts on how to enhance this dish!
