Southwest Breakfast Hash
Poached eggs, sweet potato hash browns, grilled veggies with a spicy twist, homemade bacon and a smoky chipotle southwest aioli!!
This was a flavor bomb of goodness! Let me tell you, it was my first time experimenting with a southwest aioli, and it was complete value added.
To start, I used these sweet potato hash browns. You could use regular potatoes or potato hash browns, but because of the heat to the grilled veggies and the aioli, the sweetness of the sweet potato was a nice compliment!
I put these in the oven at 425 degrees for 20 minutes as the bag suggested.
I cut up some red peppers and jalapeno peppers, onions and mushrooms and added them to the pan. I also included some frozen corn, and sprinkled with chili powder, black pepper and garlic powder and some avocado oil to sauté.
My husband makes his own bacon! That's right, he buys pork belly whole and cures and smokes them on our Traeger grill and then we individually package them! It allows us to truly know what's in our food and that makes me happy!

The bacon went in the oven at 375 degrees and I started on the aioli sauce!
I used 1/2 a cup of mayonnaise and a splash of lemon juice and mixed well! I added 1/2 tsp of peri peri chili flakes, and then about 1 Tbsp of chipotle sauce and 1 tsp of cumin powder. Incorporate the spices and sauce and test it out! it should be slightly tangy and a notable spice! Finely cut up less than a quarter cup of cilantro and mix in as well!
With my sweet potato and grilled veggies done, I started to poach my eggs and layer my plate. The veggies look delicious...… So does my bacon which I cut into bite size pieces to layer about as well!
Rest you eggs on top, spread some earth balance or butter on some fresh sour dough!
And drizzle in the Southwest Chipotle Aioli.
The Recipe:
Poach 2 eggs to your liking
Cook up some sweet potato hash browns as per their cooking instructions.
Grill in a pan 1 red pepper, 1 red onion 1/2 cup of sliced mushrooms, 1/2 cup of corn and 1 jalapeno cored. Add 1 tsp of each: garlic powder, chili powder and black pepper, or to your preferred taste. Sauté until cooked but still has some crunch.
Meanwhile cook up some bacon! I use the oven method because it doesn't swim in its own fat that way, but pan frying is great too! I cooked these in a 375 degree oven after the sweet potatoes were done for about 15 minutes. You could also pop these in with the sweet potatoes but then just watch them for burning!
The Southwest Chipotle Aoili:
1/2 cup of mayonnaise
a splash (maybe a Tsp) of lemon juice
1/2 tsp chili flakes
1 tsp cumin
1 Tbsp of chipotle sauce
Mix well and taste and adjust as you like. A 1/8 to 1/4 cup of chopped cilantro to the sauce and mix again.
