Steak Again! The Pairings are Incredible! Roasted Half Artichoke & grilled Romaine Salad

Roasted artichoke heart and leaves, with grilled romaine and fried caper salad! All dairy free! Sometimes the sides do make the meal!




I don't know what to say about the fact that we probably have a steak once a week! We get it reasonably priced, I love it and occasionally I run out of the other more economical meats I purchase in a week! It's hard to blog about it... there is only so many ways to make a steak... so I'll focus on the sides in this post... they truly make the meal anyways!



If you haven't bought a full artichoke before, you've missed out... they are both delicious and a wonder veggie that detoxes your liver! It is work to eat, but each leaf gets meatier and meatier as you get closer to the heart which is the holy grail! This tastes amazing with a simple garlic butter sauce.... I said butter.... earth balance does the trick too without a doubt!














The romaine salad is one of my favourites also! This is charred on the BBQ but first it has to soak in the sink with water to ensure it's water logged enough to withstand the heat... all you want is the ends charred not the whole head!

Throw these on the BBQ and watch them carefully and flip to char both sides....



While the Romaine chars or even before!!! Time to fry the capers! This is by far the most explosive flavor for a tiny little veggie! It's super easy, and all you need is a frying pan and some high heat oil. Blast the capers on high heat, stirring constantly, until they look crispy and have shrunk a good degree (which means they have dehydrated and will be crispy)!




So with all the attributes ready to go … all that was left was the dressing... I have and will make homemade dairy free Caesar dressing but I didn't this night. I did use some daiya Caesar dressing but added some lemon juice, garlic powder and black pepper and stirred it up to lighten the texture and enhance the flavour.!



Plate it out and serve!!! Honestly it looks amazing and given the time it takes to eat an artichoke the conversation can go on and on!! Let's all face it we are deprived on face to face convo's so any meal that encourages it is a bonus!!! Enjoy!


The recipe:


Cook your steak however you like.. this was salt and pepper and blue cheese butter. If you would like to know how to make a blue cheese butter check it out here




Charred Romaine:

split a full head of lettuce in half length way. 1 half is a suitable portion per person. and soak in the sink full of water.

Place on a BBQ and watch carefully to char the outside without completely burning it. There will be some wilting (that is a good thing).


Use your own Caesar dressing if you so choose... I add some lemon juice and black pepper to lighten and add flavour to most dressings.... its also easier to get the "drizzle", as most Caesar seems quite thick.


The artichoke:


Cut in half lengthwise and place in a covered dish with an inch of water in the bottom. Microwave (covered) for 6 minutes... check it...possibly flip them and they will likely need an additional 6 minutes. You should be able to scrap your teeth on the bottom of the leaf and "easily" come away with some (not much on the outside leaves) meat from the artichoke. It should also be super hot and if you squeezed it, it should compress if cooked enough. Lets just say you will know by taste if you should have cooked it more... it will be the difference between eating the hard flesh of a not quite ripe avocado versus a fully ripe one; soft and smooth.


Heat a small dish of butter or in my case earth balance vegan spread however you choose. Generously dust with garlic powder and stir! plate this on the side and dip each leaf in the butter mix... Its a dream.. not even kidding!
