Taco Tuesday & Cinco De Mayo!!!! The Authentic Beef Soft Taco with Fried Jalapenos

The classic taco to make any Taco Tuesday dinner plan! Especially on Cinco de Mayo! These boast homemade taco seasoning, and the traditional lettuce and tomato accompaniments! Unless you are me and then you add spicy aioli and fried jalapenos!



My kids love tacos! There is something about constructing your own dinner that makes them wolf it down! Perhaps the same sense of pride I have with making a great meal, but kid style!


I've mentioned a few times that we purchases a half a cow from the Okanagan in British Columbia. It was completely free range and organic and has that earthy taste that is almost gamey; because it essentially was a wild cow! I still have ground beef to spare, so any time my kids ask for taco's it's a deal!



I made my own taco seasoning with equal portions of cumin, chili powder, minced onion, oregano and garlic powder. I added 1/2 Tsp of salt and used avocado oil to coat the beef enough that the spice mix holds on. If its too dry while cooking, the spice will scorch to the bottom, so add more oil as needed.



I like my taco's spicy, but not "rip your face off" can't taste for a week spicy! I love the actual flavour of jalapeno's but raw they can sometimes overwhelm a dish. For that reason, I feel like the happy medium is coring them and cooking them slightly in oil. They still pack some heat, all the flavour, but none of the "holy F&%#" now I'm sweating! lol. You know what I mean!



I like these taco's simple for me just lettuce, the jalapeno's and spicy aioli..... For the kids, shredded cheese, lettuce and tomato... dry! (we are working on refining their palates)

Fully assembled, these were fresh and delicious! The beef seasoning was the right amount of flavour, heat and sweetness! I feel like Taco Tuesday will be a theme for me.... so many variations!! Let's experiment together... any types of taco's you want to see done? I'll take orders!




The recipe:


If using 1 pound of ground beef.. the following spices are exact'ish

1-2 Tbsp of each: Cumin, chili powder, garlic powder, oregano, minced onion (onion powder will work) add 1 Tsp of salt. (1 if you like a mild flavour and 2 if you enjoy a flavour explosion)


Cook the beef in a high heat oil until almost fully cooked. Add more oil if there isn't a bit still in the pan... you will need it as you add the seasoning to ensure it fully coats the beef.


The Jalapeno's, simply cut and core, pan fry for only a few minutes in oil... just to take the bite out of them... don't leave any seeds!


Cut up some lettuce, tomato and cheese or any other wanted toppings and serve! Most people like sour cream... I miss it! It will definitely add if you can eat it! I used Peri Peri mayonnaise as a topper for mine! It packs a ton of flavour!! You can buy it in most grocery stores in Canada, otherwise a blend of mayo (add sour cream if you can) and a hot sauce mixed well, gives the same effect.


Load these up on any flour or corn tortilla's of your choice and enjoy!!
