Taco Tuesday Went Quesadilla!

This was an amazing use of pulled chicken and was dairy free to boot!! If you miss cheese and can't have it... This will calm the craving, and if you can eat cheese... you won't tell the difference!



So..... Last Tuesday I did a pulled chicken taco... and as per usual I made way too much meat! That is the issue I face regularly, too_much_food!! I know its' hard. But either way... I found lots of ways to use it! One of which is the pulled chicken quesadilla with vegan cheese, Poblano peppers and onions...melted to perfections!

For this quesadilla I oiled the pan with olive oil and placed the 1st tortilla down and layered some vegan cheese on and then the pulled chicken. Then I sprinkled some diced red onion, poblano peppers and more vegan cheese before then next tortilla.




I cooked this in a pan with medium heat to ensure the tortilla became nicely golden brown while the vegan cheese melted to bind the quesadilla together! Place on the chopping block, allow to sit and cool slightly before cutting in quarters and serving! Couldn't be easier from start to finish!! I hope you try it!

I love that so many of your dishes have a sweet/savory or sweet/ spicey contrast. Your combos are always a unique new taste experience. Restaurants would do well to showcase some of your ideas!!!
