Thai Chicken Noodle Soup

Soup is such a wonderful fall thing to eat no? Even better if it heats you up from the inside because it has Thai chili's! This was such an easy yet filling soup, I have no idea why I had not tried it sooner... it will absolutely go on heavy rotation at our house!



Seriously this will be a short post... that's how easy this recipe is... Thinly slice some carrots , red onion and red peppers and place in a pan!



Add in 2 cups of chicken broth.. I had some I cooked myself from a chicken I had cooked... simmer the veggies down to be soft.


In a pot of water I boiled 1 chicken breast until fully cooked.... I really would recommend coking the chicken this way... cheating close second option is using a store bought roasted whole chicken. Once cooked, shred the chicken into bite sized pieces.




I typically use organic coconut milk but for some reason I could not find any this week... either way this brand was good! I added one can to the pan to mix with the broth and veggies!



There are plenty of great red curry pastes... I have tried several.... This one is also delicious... I placed the whole package into the broth and coconut milk mix and also added in the shredded chicken and the rice noodles.



I honestly feel like this took me 15 minutes when you start with the chicken boil first... it was a rushed Monday getting the kids to sports or dance! Super awesome mom win!! Top with some Thai chili's for the heat lovers in your world and some fresh cilantro for those that want to cool it down. This was filling, cheap, delicious... I could keep going!!! I hope you try it!
