The Best Burger in Town!
With deep fried pickles, basil aioli, fresh baked fries!

Is there anything like a big juicy burger? Nope! they're awesome. Pair them with some fresh homemade fries and my favourite basil aioli dipping sauce, and I'm in heaven!

The french fries take the longest to cook so this is where we will start. I enjoy the large wedge style fries cut from organic russet potatoes. Coat lightly with avocado oil and some for of salt and place in a 350 degree oven to cook for about 45 minutes with a flip in the middle.
I enjoy both pickles and onions on my burger, but I also really like deep fried pickles! It occurred to me that I could do a battered pickle and onion mix for the burger itself! It worked great.... here's the recipe.
As it turns out I picked more of a tempura batter to make these to keep it light. I mixed 1/2 cup of organic all purpose flour and 1/4 cup of arrowroot starch (you can sub in a corn, potato or cassava starch here too) A generous shake of dried dill (1 Tbsp) and then I started to add carbonized water slowly to create the batter. The bubbles from the water is what gives the light texture. You want to add enough water so that the pickles and onions fall into the batter but still thick enough that the batter sticks.
From here I pre-heated a pan with a shallow amount of avocado oil and placed small bunches of the mix on the pan to brown, flipping to get both sides. You do not want to cook this through on the pan, that is a lot of oil, just brown and then they will join the fries in the oven.
Keep going until all of the pickles and onions are cooked, transferring to a baking sheet and cook in the oven at t he 350 degrees for about 15-20 minutes.
I like to oven toast my buns... I do believe it adds some delicious flavour but it's not necessary... I popped them in the oven as soon as the french fries were fully cooked and out.
On to the basil aioli. I love this both to spread on the burger, but also as a dip for my fries... I can't remember what restaurant used to serve this, but I can't take credit for the idea, but I can assure you, its really tasty.
I pulled about a 1/4 cup of fresh basil leaves from my plant and added some garlic powder, and 1/4 cup of mayonnaise. I placed all of it in my Ninja blender and blended until smooth! That is it! I also cooked the burgers on my BBQ until well done, and now it was time for assembly!
I placed a generous amount of the basil aioli on both sides of the bun, layered some lettuce and the pattie. Layer on however many deep fried pickles and onions you want, and close it up. Serve with your fries, a side of basil aioli and a salad! A perfect easy dinner!! I would say the whole process is 1 hour, but that is all cooking time for the fries! It's minimal actual effort but the meal doesn't look like it!
