I love salads but they can't be bland... life is too short. It has to be both fresh and crunchy with some warm cooked veg toppings and an amazing flavour bomb of a dressing! Here is my rendition.

The dressing is honestly easy! 1/4 cup of avocado oil, 3 Tbsp of mayonnaise a splash of lemon juice 2 tsp of grainy mustard, 2 tsps. of minced garlic 1/2 cup of cilantro and 1 tsp of Now brand Better Stevia to make this sugar free. Blend it all up in a Ninja blender until smooth and you are already ready to make a great meal the salad itself come second to this flavor lol.

Doesn't it look pretty and healthy? Sure does!!

I really liked this Now brand stevia, there are a lot of stevia's out there now but not many that are also organic. This was certainly a plus for me. Now brands are available in most health food stores, I highly recommend trying this one.

Rip up some butter lettuce as the base and wait for the toppings, this is an incredible hot salad!

As you prep the toppings to sauté, pre-heat the oven to broil and grease a baking sheet. Pile small mounds of dairy free cheese on a baking sheet. This creates the fun dairy free cheese crisps to accompany the salad.... so good!

The sautéed veg topping was both portabella and white mushrooms, white onion, corn and grape tomatoes... a little Italian spice mix and avocado oil! Cook on medium heat! The goal is to soften and warm these vegetables without over cooking, and getting them warm right before you intend on serving this meal!

The salad itself is incredible... dairy free cheese disks, fresh butter lettuce and warm veg topping, then add this incredible dressing... its a great vegetarian meal! Not vegetarian? Me either (although I totally agree with the health benefits of eating vegetarian)

Pair them with some BBQ chicken thighs... Problem solved.

It was delicious, fresh, organic and sugar free. Now brand Better Stevia was an ingredient you can't do without on this recipe! It's versatile to boot... check out some future blog recipes where I have also used this product! It's incredible.
