The breakfast burger... It's a thing... now!!!

So my husband is an aficionado of all things meat... I will spoil you soon with home made streaky bacon that would contend with bacon found in Irish breakfast served in Dublin and antibiotic free! But burgers are on his radar too... and thank god! they are delicious.



We were planning to have friends for dinner... home made burgers were on the menu but when made from scratch... it would be an epic fail if they fell apart on the grill... this requires morning prep!


The burger itself is both ground beef and pork. Some include lamb that tastes great also if you so choose! Our beef came from a farm in the Okanagan of BC and lived their life free range and were not subjected to unnecessary hormones or steroids and you can definitely tell the difference in taste. Beyond taste... if you have ever purchased a pound of ground beef only to see it shrink up in cooking, that is because some companies inject or plump meat in water to increase the appearance of volume and "weight" only to cook off in steam at cooking... Not true for this beef. They have a small consumer pool or I would advertise for them. It's quality stuff though and with some advanced prep, is economically sound to find these farmers to purchase a full, half or quarter cow from. But back to the burger!



The beef and pork are blended together with salt and pepper and rolled out on a parchment lined baking sheet. This is to ensure that each burger starts at the same thickness for cooking. The top scored to encourage expansion during the cooking phase.



Find a kitchen appliance in your house that is the relevant diameter to the burger you want and separate each burger! A useful hint my husband has learned along the way is providing the burger a "hole" in the middle to allow the natural expansion to fill in the middle rather than creating a spread or flattening of the burger which minimizes texture and juiciness.





These can be pan fried or BBQ'd… I do enjoy the BBQ image and flavor!




Now lets make this into a gourmet breakfast shall we?

My egg prep pf choice is basting... whereby I pan cook the egg in water, covered to steam the top of the egg. It allows for a healthy no added fat option where you have lots of control on how "done" you like your eggs!




This breakfast burger was taken to another level with organic arugula and tomatoes, melted Bingo cheese and home made rosemary garlic aioli
