Steak House Quality Meal - Fraction of the Price! and Makes You Feel Like You Got Out!
I love... well I guess love(d) going out on date nights. I love my kids but this 24(7) thing is a challenge and I miss getting a sitter and having an uninterrupted adult conversation with my husband! Not too much to ask is it? But since this is not currently possible.... we brought the Steak House to us!
This meal is not cheap, but truly you can do it on a budget and also regardless of the splurge or not... it was cheaper than our typical bill out! So there were a few silver linings to our "next best thing" date night!

We cooked the steaks with a simple salt and pepper dusting on the BBQ to a perfect medium rare.
I also bought a frozen bag of King Crab Legs from Superstore when they were on sale, for a special night (enter this night please!) and they added nicely! The Crab Legs were boiled in water to heat, you could also steam them!
The labour went into the blue cheese butter and double stuffed potatoes. Did I say blue cheese? Can't I not eat dairy.... true! Strangely enough, blue cheese is my only cheese I can still do... which I think is because I legitimately prayed hard enough for the one cheese I could not live without... and I've been a good enough human... it was granted!!!!... or its because its so old... who the heck knows.. I'm just thankful!!! So I now make my blue cheese butter with Earth Balance and.... all is right in the world (and my body!) More on that recipe later....
My husband baked some ridiculously large potatoes.... this was done on the BBQ wrapped in tinfoil. Once cooked through, he scooped the skin and mashed the flesh with (in my case) Earth Balance and some oregano salt and pepper and stuffed it back in to broil to a crispy top in the oven... his dairy tolerant version included shredded cheese.... it looked delicious.... I was slightly jealous but not really because mine rocked too!
The blue cheese butter consisted of my husbands home made bacon, crumbled. If you are new to our homemade bacon check out this link to see how we make it. A small quarter wheel of blue cheese crumbled and added to a sauce pan on low heat... As the cheese starts to melt add small amounts of Earth Balance (or butter) to the pan... too much will make this runny so start a Tbsp at a time. Dust lightly with pepper and add green onion towards the end and save some to garnish the top. Still love our Shun knives #shunknives
For the butter sauce for the crab.. I simply melted Earth Balance with some garlic powder and it did the trick! No need for an image... you get the idea!
My husband made the most amazing Steak House worthy Wedge Salad... It was legitimately a quarter head of Iceberg Lettuce, severed down the center, but not all the way... and it operated as a nest for the additional bacon and blue cheese crumble that found their way there. I topped this with Daiya Dairy Free Ranch, and it was perfect!
All in, this was delicious... we added some ambiance, and had our children enjoy the fun of being our servers for the night! (It adds to the moment... we even had a little "bell" app on YouTube if we needed anything... adorable... plus a life skill!! win win!)
It truly made a difference in the "cabin fever" we... and all of us must be feeling these days... so please... give it a try... we need to get creative these days... enjoy life, food, love! I hope you give it a go!
The Recipe:
Pick any steak you choose and cook it with salt and pepper to your desired done-ness... add a marinade if you aren't down with the blue cheese butter... but if you are making the butter... let the steak go Au Naturel!
Crab Legs:
Boil til warm and cooked!
Blue Cheese Butter:
use a small 1/4 wheel of blue cheese and place in a sauce pan to melt on low heat.
Once the cheese starts melting add 1 Tbsp of Earth Balance (or Butter)... you may need more but don't be too quick to add more.
Add some previously cooked and chopped bacon to the mix... for 2 people 2 slices will do.
Once melted, add a dusting of pepper to taste and some thinly sliced green onion and stir in... garnish the butter with more bacon and green onion.
The Potato:
Bake a potato, use the oven, a BBQ or the microwave... however you like! Cut in half and scoop out the flesh into a bowl. Mash with Earth Balance (or butter) salt pepper if you can do dairy... some shredded cheese. Scoop back into the skins and broil in the oven to crust the top (and melt the cheese) Note: I haven't tried Daiya cheese but I'm sure it would work! Let me know if you try it!
Wedge Salad:
1/4 iceberg lettuce, and cut down the middle but only half way so it stays together.
sprinkle with bacon bits and blue cheese.
Ranch dressing is typical for dairy free I used Daiya ranch, but you can do whatever dressing you prefer.
