The Dairy Free Breakfast Pizza!

A fun way to get some veggies and protein in on a Sunday with a meal your kids will love to make with you!

I love pizza, I love it so much I decided to make it for breakfast! I'm not sure if I have ever seen a breakfast pizza before... I'm sure this isn't the birth of the concept! But it was in my brain! And when I told the C2's they were having pizza for breakfast, the house erupted in screams of joy! They love cooking with me and making their own creations, and this breakfast had all of those elements. I lost them temporarily when I asked them to crack and egg on top, but non the less they went with flow and loved the finished product.


I did not want to make large pizza's just enough to be one per person. Naan bread is the perfect base in these situations! They have a great thick consistency and are the perfect "individual size"!



I am also a big fan of re-purposing other food items, so when I had some pasta sauce left over from another meal, I'm happy to use that in place of actual pizza sauce.


I grilled up some of my husbands back bacon, given this is breakfast! It was the perfect protein addition. Once cooked up I thinly sliced it to be suitable for sprinkling on top!




I also grilled up some organic peppers, mushrooms, garlic and jalapenos, once finely chopped!




I layered these on top as well!




Because I can't eat dairy it's really important to me to find great cheese alternatives that "act" the way cheese should, for instance on pizza. It's really disheartening when you pull your families "real cheese" versions out of the oven with perfectly bubbly melted cheese, and your vegan alternative cheese looks about the same as it did when it went in the oven. I have found Emborg which honestly is the best vegan cheese I have tried yet, especially when the point is melting it!




So that said.... I sprinkled my "cheese" on top, and cracked my egg! and placed these pizzas in the oven at 300 degrees for approximately 10-15 minutes





I think these turned out so well! They were tasty and healthy and a departure from the norm! I hope you try it!
