The Dairy Free Steak and Prawn Salad Rice Bowl

This was ridiculously easy to make, took under 20 minutes and was delicious and flavourful! This is a busy week night at its best!

I literally whipped this up in 20 minutes! But you wouldn't know it to taste it! I had all the elements of a good rice bowl... obviously rice, in my case organic white rice... romaine lettuce, some cilantro from my garden, black beans Cajun prawns and steak!




I legitimately found some decent sized prawns for a great price! When I find these things, I stock up and then I have them on hand for occasions such as this where I need to make an amazing dish without a real plan or a lot of time. I boiled these until cooked through and then I cooled and pealed them, leaving their tails on for appearance.




Once peeled I placed them back in a pot with some Earth balance butter alternative (you can use real butter) and Traeger Cajun spice! This stuff is amazing... nice and spicy so use as you can tolerate!


At the same time I placed my steak on the BBQ. I also seasoned these with some Traeger Cajun seasoning!



I had two different cuts in the freezer so this dish is perfect since they get cut up before service, so no one can tell! I cooked them to about medium and sliced up in prep to go on top of my rice bowl!





I had previously cooked some white rice in the microwave (I know people may not love this, but I'm about efficiency and it comes out perfectly in 20 minutes so it meets all of my needs)


I layered some rice in a dish and surrounded with cut romaine.







I further layered with fresh cilantro and some organic black beans! I love Earth's Choice brand.. they are always reasonably priced at Choices supermarket and tastes great!



Once my salad/rice base was set, I layered on my proteins and chose a dairy free creamy dressing to top this off. In this case I used Daiya Dairy Free Ranch.





I think this turned out pretty awesome! The spicy meat was calmed by the ranch and coolness of the lettuce and the base of the rice! It came together in 20 minutes so it was perfect for a busy week night meal! Hope you try it... and honestly if you do send me your photos!
