The Freshest Dill, Okra, Mushroom Pasta Salad Ever!

I love fun salads... in fact I have probably ruined "regular salad" for myself, because I always want to throw more cool stuff in there. Before I know it, what was supposed to be a side salad becomes the dinner salad..... I suppose I could have worse problems. This fun salad was intended to be dinner... I served it up with some grilled scallops and shrimp! It was delightful! Here are the ingredients!



I took a crisp head of butter lettuce and a fresh bunch of dill and coarsely chopped both. Do not mix them together just yet though.





I also cooked up some farfelle pasta and let it completely cool before adding to the lettuce. Any pasta could in theory work, but I think the smaller prettier variety works better texture wise.




I happen to love pre-cut mushrooms and this organic variety was just waiting to save me time! I placed those with some "me" cut okra in a large pan with some high heat oil.




I added some of the fresh dill to the pan and sautéed them until soft and tender.... you want to do this just before serving the salad because having some of the vegetables warm on this salad is a nice addition.





I layered it all out and sprinkled with more fresh dill and served with a lemon dill dressing.


I did mention that I served these with scallops and shrimp! It was in fact an amazing topper for this as well!





I simply placed the scallops in a pan with some white wine, oil and the stems from the dill and lightly sautéed, until cooked. You throw away the stems but they certainly help enhance the flavour. I had pre steamed and shelled some shrimp, so once the scallops were almost cooked through I added in the shrimp nd some dairy free butter. 1 Tbsp will do and just warm through. I placed these on the side of the salad but most people served them on top with the warm vegetables.




It was a beautiful easy dinner, with clean delicious protein and an incredible flavour of fresh dill. I hope you give it a try!
