Turkey Chorizo Burger With Dairy Free Cheese

The unique blend of ground turkey and chorizo sausage in a burger and you guessed it... a stuffed patty!

This was a recipe inspired by a work colleague of my husband. He has been enjoying the unique but very complimentary blend of sausage and turkey and I'm so glad we gave it a try. The turkey feels like it lightens the burger but the chorizo kicks up the flavour where the plain turkey burger can be a bit dry and bland. #balance

This mix was literally a 50/50 blend ground Turkey to ground Chorizo. Add an egg and a squirt of (seriously) ketchup and mustard, some salt and pepper to taste... no fillers like bread crumbs required. Mix well with your hands and form into balls of desired size and weight. These came in at 5 oz each.

If you do not want to stuff this patty, simply flatten it out into a patty form... if you do want to try my "fake" cheese (or real cheese) stuffed version, split the ball in half again and flatten those into two patties.

In the case of these, we lined the bottom patty with a ring of red onion and orange pepper to help contain the "cheese" it definitely helped to keep the "cheese" inside but I'm not sure it added to flavor once you put your regular burger toppings on... give it a try if you like.... I liked its functional addition but it added nothing to taste (didn't negatively impact it though).

Put the two patties together and seal the edges letting the pepper or onion be your guide. We did these beauties on the BBQ, but you could pan fry or bake them.

So these patties are flavourful but I would not call them spicy... this will obviously depend on the chorizo you pick! But I do like heat so I chose to kick it up a notch with peri peri sauce and mayo.... topped my bun with some lettuce tomato and onion

Honestly any toppings you choose will pair well... and when I cut into it, you can see my Daiya dairy free cheese coming out! A small dose of a taste "cheese like" in a place any of us most miss it if you join me in not being able to eat it! Amazing!!

The recipe:

1 pound ground turkey

1 pound ground chorizo

1 egg

Approx 1 Tbsp of yellow mustard

Approx 1 Tbsp ketchup

Mix well. Form into balls and then flatten.... from there you got this!
