Whole Lobster Paella

This is as decadent as it gets!

I've made Paella before but for obvious reasons this one I stepped up a notch! Lobster is seriously one of my favourite foods.... such a favourite I probably eat it like I live on the East Coast and can afford it! The true of the matter is there are some great places you can purchase lobster and have it sent to you!

So my kiddo's the C2's can be picky eaters... so I tend to find creative ways to make fun food for me and the husband while having a bland version for the kiddos. For this reason I went a bit unorthodox and cooked the rice separately... I know! but trust me this still tasted amazing. I then cut up some of the homemade sausages that my husband made and pulled out some cooked but frozen mussels for the dish. I don't think I have ever shared my husbands sausage making yet, they are delicious and again... we know exactly what goes into them.




I also cut up some yellow peppers, white onion and green olives for the veggie component and placed them all in a frying pan with some high heat oil. I also love artichokes in this but alas, I did not have any so we went without... still tasty though and fast!





I added in some baby scallops, which added to the robust seafood flavour of this dish. If you pick small ones, don't put them in too soon or they will get overly cooked. Toss this around!







Once the mix become mostly cooked I added in a large can of organic crushed tomatoes and some white wine I had on hand! Dry is better, most will do.



I then added my cooked rice and blended well into the mix... the smell is pretty awesome at this point, but wait.... it gets better......




I added some pepper, turmeric and saffron and mixed in well!



I tossed in my now thawed mussels to steam and heat them up... in the mean time I steamed my whole lobster for his feature act in this dish!



What I would love to say here, in relation to the time frame most expect with a slow cooked paella, is that I have literally been at this for 30 minutes. My rice cooks in 20, sautéing veggies and sausages are seriously easy and as long as you have room to steam your lobster on another element you can get this entire meal ready in 35 minutes. Grab a fun dish that is as long as your lobster, plate out your paella, building up the sides to give the elusion of a heaping meal (but lets face it we all fill up on rice! we need to focus on the lobster here) and nestle your big guy to rest in the middle of it! Serve with some chilled white wine and you have a date worthy meal in 35 minutes or less!
